Vegan Black Bean Tacos

Name something better than vegan tacos… We love how this recipe turned out! Tacos are perfect for every night of the week (especially Tuesday… and Thursday!) give this recipe a go and let us know what you think using #figgee on social media!

Ingredients:
1 15 oz can Organic Black Beans
Corn Tortillas
Vegan Sour Cream
Cilantro
*Pickled Red Onion
*Pickled Jalapeno
Sliced Grape Tomato

Black Bean Seasoning:
2 Tbsp FigBrew Grounds
1 Tbsp Cumin
1 Tbsp Salt
1 Tbsp Chili Powder
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/2 Cup Brewed FigBrew
2 Tsp Liquid Aminos or Soy Sauce

Directions:
Combine all seasoning ingredients and mix well.  Next, heat black beans in a small saucepan over medium-low heat, and season with 3 tbsp of seasoning.  Using a fork, mash the beans until somewhat smooth, retaining some texture. 

Chop cilantro, slice tomatoes, toast tortillas, and assemble ingredients into tacos, using whatever toppings you’d like.  I also used a fire-roasted salsa, seasoned with Frig Brew grounds, which gave the salsa a slightly intensified char flavor.  Incredible!
