Tomato & Strawberry Gazpacho Topped with Lime Crema and Figgee

With the weather warming up it’s nice to get a bit of a cool & refreshing break. This is super easy to make, and the flavors are bright and satisfying.
4-5 Roma Tomatoes
4-5 Alicante Vine Ripened Tomatoes
1.5 pints fresh Strawberries
Figgee for topping
Start a pot of boiling water on stovetop. Using a sharp knife, make an ‘X’ shaped, shallow cut on the bottom of each tomato. Working in batches, blanch the tomatoes until you see the skin begin the split and/or peel back.
Immediately put tomatoes in an ice bath to stop the cooking. Once all the tomatoes are blanched, use a paring knife to peel the skin off each tomato.
Quarter the tomatoes and discard the seeds. Begin cutting the tops off the
strawberries, and put them, along with the tomatoes, into a high speed
blender or food processor. Process until smooth.
Add salt to taste.
I like to add a Lime Crema and the roasted Figgee to my gazpacho. They provide some incredible flavor levels and the dish as a whole is super refreshing.
Combine these three to your liking, taking care not to make it too runny.
